Concept Types

Full service, fast casual, beverage led, hotel outlets, delivery formats and specialty production businesses. Different formats, different failure points.

Full Service

Casual & Upscale Dining

Table service concepts live or die on two numbers: average check and labor as a percentage of sales. We build the service model and menu mix to protect both.

  • Service model and staffing design
  • Menu mix engineered for check average
  • Wine and beverage program structure
  • Reservation and turn time planning
  • Private dining and events revenue
  • Front of house training standards
Limited Service

Fast Casual & QSR

Throughput is everything. A fast casual concept that cannot move a line at noon has a design problem, not a marketing problem.

  • Line flow and throughput modeling
  • Menu simplification for speed
  • Kitchen layout and equipment sizing
  • Digital ordering and pickup integration
  • Packaging and to go program
  • Multi unit replication readiness
Beverage Led

Cafes, Bars & Taprooms

High margin beverage with food sized to support it rather than compete with it. The most common mistake here is a kitchen far larger than the concept needs.

  • Beverage program and pricing
  • Right sized food offering
  • Bar design and workflow
  • Coffee and espresso program build
  • Happy hour and daypart strategy
  • Licensing and compliance guidance
Hospitality

Hotel & Resort F&B

Outlets inside a larger property answer to occupancy, banquet demand and a captive guest. The economics work differently and the concept should reflect that.

  • Outlet mix and positioning
  • Breakfast and banquet program design
  • Room service and in room dining
  • Poolside and seasonal outlets
  • Labor sharing across outlets
  • Brand alignment with the property
Emerging Formats

Ghost Kitchens & Delivery

Delivery only concepts remove the dining room and every advantage that came with it. Menu durability in a box and unit economics after platform fees decide the outcome.

  • Delivery first menu engineering
  • Platform fee and margin modeling
  • Packaging and travel testing
  • Virtual brand development
  • Commissary and shared kitchen setup
  • Multi brand kitchen operations
Specialty

Bakeries, Catering & Retail

Production driven businesses with different rhythms, different waste risks and revenue streams that can be layered on top of one another when planned properly.

  • Production planning and yield control
  • Retail and wholesale channel mix
  • Catering program and pricing
  • Shelf life and waste management
  • Seasonal and holiday revenue planning
  • Packaging and labeling compliance

Common Failure Points

What actually sinks restaurants

After enough projects the same handful of problems appear in nearly every struggling restaurant, and almost none of them are about the quality of the food.

  • The menu is too large. More SKUs means more waste, slower tickets, more prep labor and worse consistency.
  • Prices were set by looking at competitors. Your costs, rent and labor are not theirs. Copying a price copies someone else's margin problem.
  • The labor model was never built. Scheduling by instinct rather than to a forecast is the most expensive habit in the industry.
  • No written systems. Everything lives in the owner's head, so quality collapses the week they take off.
  • Rent that demands unrealistic sales. Occupancy cost above roughly ten percent of sales rarely recovers, whatever else you fix.
  • The concept is vague. If the team cannot describe it in one sentence, neither can the guest, and neither can a review.

What We Look At First

  • Menu mix and contribution margin by item
  • Prime cost as a percentage of sales
  • Occupancy cost versus realistic sales capacity
  • Labor hours against actual demand by daypart
  • Waste, yield and portion consistency
  • Average check and items per ticket
  • What the concept promises versus what it delivers

In Their Words

Client feedback

"They told us the site was wrong before we signed. That single conversation saved us more than the entire engagement cost."

First time owner, Central Florida

"We were full every weekend and still losing money. The menu rework moved us to profitability in one quarter without raising prices much."

Operator, two locations

"The manuals were the thing. We opened the third location with a manager who had never worked for us and it ran correctly from week one."
